Roasted Red Pepper Hummus

Ingredients

  • 1/2 tsp salt
  • 4 garlic cloves
  • 1/4 cup olive oil
  • 2 red peppers, roasted with skins and seeds removed
  • 1/2 tbsp cumin
  • 1/2 tbsp lemon juice
  • 1 can chickpeas, rinsed and drained
  • 1/2 cup tahini

Directions

1. Preheat oven to 400 degrees & place red peppers on a pan to roast. You’ll know the peppers are done when the skins start to blacken, and you can feel the skin separating from the flesh of the vegetable (around an hour).
2. Once fully roasted, dunk the peppers in an ice bath and remove the skins and seeds.
3. In a high-power blender or food processor, add salt, garlic, olive oil, peppers, cumin, lemon juice, and tahini. Blend until smooth.
4. Add in your chickpeas and blend once more. Add in more salt, garlic, and cumin to taste. Store in an airtight container in the fridge for up to a week.
